What is Hazard Analysis and how can it help me prevent problems with food?
Hazard analysis is a common sense, straight forward approach to food safety. If applied correctly it will result in safe food at all times. The system was first developed in the early 1960s as part of the space programme to make sure foods eaten by astronauts did not develop food poisoning in space. Symptoms of vomiting and diarrhoea would obviously be highly undesirable in zero gravity!
In practice it involves the following:
Food poisoning is unpredictable. It could occur at any time, but usually when you are least expecting it. Hazard analysis helps plan and manage food safety in a sensible way, guarding at ALL times against poor hygiene that can result in food poisoning. You can then be confident that it won't become a reality for your business
